OOOOOO I can’t believe it’s taken so long for me to try this recipe!
I have had the Slimming World Christmas book for a few years and only just got round to making these at the weekend. Now I LOVE mince pies, but even I know how high in calories and sugar they are for you.
So I made the Slimming World version with pretty stars and they taste exactly the same, without over doing it on the pastry and butter!
My one point to remember though, is make sure you stick to the oven temp it tells you, as mine somehow managed to come out both burnt and underdone……Baking is not my forte.
I put them in while Lee was cooking a gammon joint, so the oven was at 220 degrees C instead of 170 (fan-assisted). Also I definitely over filled my mince pies…I mean, they are called mince ‘tarts’ on the SW recipe. You’d think I’d twig, but I put as much mince pie loveliness in each one as humanly possible. 😀
And I didn’t sprinkle mine with icing sugar either ( trust me, they don’t need it).
But upon tasting I was in heaven despite the burnt underdone few tarts that didn’t make it… I’m completely lying.. I ate them anyway!
And you know I love a SIMPLE recipe, and it doesn’t get any easier than this if you’re looking to dip your toe into the baking world.
I’m definitely gonna give them another go, with the oven at the right temperature, and hopefully they’ll turn out even better!
